1 package of Shiitake Fettuccini
1/2 cup olive oil
1/2 cup chopped walnuts
1/2 cup fresh basil
1/2 cup fresh parsley
1/4 cup grated parmesan cheese
1 teaspoon salt
1 teaspoon pepper
4 cloves garlic
Handful of pine nuts for topping
Handful of cherry tomatoes, sliced, for garnish

1. Place olive oil, walnuts, basil, parsley, parmesan cheese, salt, pepper, and garlic in a food processor or a blender and blend well.
2. Cook pasta according to package directions, drain, reserving 1 cup pasta water, returning it and pasta to pan.
3. Toss pasta with blended sauce.
4. Toss toasted pine nuts on top as well as sliced cherry tomatoes for garnish.
5. Option: Serve with lemon-caper chicken.
